Quinoa with Roasted Veggies Recipe
- 1 cup Quinoa
- 3 Zucchinis, sliced or chopped
- 2 Carrots, peeled and sliced or chopped
- Olive Oil, enough to coat veggies
- 1/2 tsp Sea Salt
- 1/2 tsp Curry Powder
Directions: Cook quinoa according to package directions. Toss vegetables with olive oil, salt and curry. Spread on a cookie sheet and roast at 300 degrees until tender (about 30 minutes)*. Combine roasted veggies with quinoa and enjoy!
*I like my veggies well done and caramelized as pictured so they took about an hour.
